1 medium tortilla
1/3 cup of black beans, drained
1/4 cup shredded cheese
2 tablespoons of salsa verde
Crushed red pepper flakes
1 - Heat small skillet, coat with cooking spry, and cook the eggs sunny side up until the whites are cooked through, but the yolk is still runny.
2 - While the eggs are cooking, warm up both sides of the tortilla on a medium skillet. Top the tortilla with black beans and shredded cheese until it's melted, then top with the salsa verde.
3 - When eggs are cooked, place them on top of the tortilla and beans, then add black pepper and red pepper flakes to taste.
