Ingredients1 package of Trader Joe's Sweet Corn, Burrata & Basil Ravioli
1 medium zucchini sliced
2 tablespoons of olive oil
1 clove minced garlic
1 ear of corn
Salt and pepper to taste
Heat 1 tablespoon olive oil in large sauce pan over medium high heat. Add garlic and cook until fragrant, about 1 minute. Add zucchini, stir, and sauté until softened.
Meanwhile, boil water and cook ravioli according to package directions. When cooked, drain, and return to the pot. Add 1 tablespoon of olive oil and stir to coat.
Add corn to the pan with zucchini and cook a few minutes. Add in salt, pepper, and parmesan. Combine zucchini corn mixture with ravioli, stirring gently. Serve in bowl and top with additional parmesan.
