Quarantine Eats: Fried Gnocchi with Grape Tomatoes & Spinach

2 tablespoons of butter
1 package of fresh gnocchi
1 bag of spinach, chopped
1 cup of cherry tomatoes
Grated parmesan
1 teaspoon minced garlic
Kosher salt and pepper to taste

Melt butter in large sauce pan over medium high heat.  Add garlic and cook until fragrant for about 1 minute. Add gnocchi and toss in butter, until fully coated.  Cook until gnocchi begins to brown and crisp up.

Cut cherry tomatoes in half and add to the pan. Cook until they begin to soften. Add spinach and stir until wilted. Grate in parmesan cheese, and sprinkle with salt and pepper. Serve into bowls and top with more parmesan.
